Most of the canoe operators in Zambia actually canoe close to the Zimbabwe shore, then camp on the Zambia side. Nearly all the Zambian operators start in Game concessions, where there is hunting,the wildlife is skittish and less of them, villages, camps, lodges, transfer and fishing boats. They end normally before entering LZNP. River Horse runs a 6-7 day canoe safari that ends near the Luangwa confluence.

I recommend people go over to the Zimbabwe side for canoeing.

You need then to decide if you want semi-participatory or the luxury of having someone do it all for you.

Then decide what section to canoe. Broadly speaking, there are 3 places:

1)start below Kariba Dam - generally finish at Chirundu
2)start at Chirundu- generally finish around Vundu Camp to the park headquarters.
3)start around Vundu camp to the park headquarters and finish near Chikwenya

Unfortunately, most people let price and availability decide for them. In my opinion, #1 do not offer the quality of experience as #3. Briefly, they are run through game concessions, but as the Zambian operators confirm,they are still good areas to canoe in. However, canoeing in Mana Pools to Chikwenya, you will find the wildlife numbers higher, relaxed to your presence, and depending on the program you chose, will have good bushwalking experiences.

Natureways offers luxury, have everything done for you programs.
Steve Pope no longer does canoeing. He will be running the Predator Research project.But will still offer his camping and bushwalking at Chitake Springs. An excellent addition to a canoe safari.
